It’s creamy, flavorful, and comes together in just 15 minutes using simple pantry ingredients. Enjoy it on sandwiches, wraps, crackers, or over a bed of crisp greens.

Prep Time: 15 minutes
Cook Time: 10–12 minutes (for the eggs)
Total Time: 15 minutes (using pre-cooked eggs) or about 30 minutes from start to finish
Servings: 4

Ingredients
8 large eggs, hard-boiled and peeled
⅓ cup mayonnaise
1 teaspoon Dijon mustard
1 teaspoon fresh lemon juice
1 tablespoon finely chopped chives or green onions
1 tablespoon finely chopped celery
½ teaspoon salt, or to taste
¼ teaspoon freshly ground black pepper
¼ teaspoon paprika (optional)
Instructions
1. Cook the Eggs

Place the eggs in a saucepan and cover with cold water by about 1 inch. Bring to a boil, then cover the pan, remove it from the heat, and let the eggs stand for 10–12 minutes. Transfer them immediately to an ice bath and cool completely before peeling.

2. Chop the Eggs

Roughly chop the peeled eggs. For a creamier texture, mash a few of the yolks with a fork before mixing everything together.

3. Make the Dressing

In a medium bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, pepper, and paprika until smooth.

4. Mix

Add the chopped eggs, celery, and chives. Fold gently until everything is evenly coated. Taste and adjust the seasoning if needed.

5. Serve

Enjoy immediately or chill for 20–30 minutes to let the flavors meld.
